Clear Pork & Papaya Broth
Delicate pork loin and tender papaya slowly simmered in a crystal-clear herbal broth infused with fresh ginger, green onions, peppermint, and thyme—light, soothing, and deeply nourishing, finished with gentle aromatics and a naturally comforting warmth.
Ingredients
Pork loin, cut into large pieces
Papaya, cut into large chunks
Ginger, sliced
Green onions
A small amount of fresh herbs
(any herb you like, for the cleaning step)Peppermint
Thyme
Water
Cooking wine
Method
1. Prepare the pork
* Place the pork pieces in a pot of cold water with cooking wine and thyme
* Bring to a boil.
* Skim off any foam and impurities that rise to the surface.
* Drain the pork, rinse under cold water, and pat dry.
2. Prepare fresh broth
* Fill a clean pot with fresh water.
* Add the pork, papaya, peppermint, ginger, and green onions.
3. Cook the broth
* Leave the lid open.
* Bring liquid to a boil and keep boiling for 5 mins
* reduce the heat to medium-low with lid
4. Slow simmer
* Maintain the broth at approximately 85°C (185°F).
* Avoid vigorous boiling; only tiny, gentle bubbles should appear.
* Simmer gently for 1½ hours.
Finish
Turn off the heat.
Remove the ginger and green onions if desired.
Serve hot.
Note
Keeping the temperature around 85°C helps produce a clearer broth.
Large cuts of pork and papaya hold their shape better during the long simmer.
Season with salt at the end, if desired.
