Stir-Fried Millet Rice Bowl with Vegetables
Moist millet rice stir-fried with earthy mushrooms, fragrant ginger, green onions, and seasonal vegetables, creating a simple yet deeply nourishing meal. Finished with fresh herbs and a drizzle of sesame or olive oil, this comforting bowl offers warmth, flavor, and wholesome vitality in every bite.
Ingredients
Lotus root, chopped (or canned water chestnuts, chopped)
Bitter melon, chopped (or substitute with celery, zucchini, or a combination)
Cooked millet rice
Stock, broth, or water
Salt, to taste
Optional: Soy sauce
Mixed cooking oil (any combination of animal fat and vegetable oil, such as avocado oil with butter or lard)
Green onions, chopped
Ginger, minced
Mushrooms, chopped (use a generous amount)
Optional: Ground chicken, pork, or beef

Sesame oil
Extra virgin
olive oil
Chopped nuts
Sliced olives
Fresh herbs
Method
1. Build the Flavor Base
Heat a pan and add the mixed cooking oil.
Add the green onions and ginger. If desired, celery may be used instead of ginger. Stir-fry until fragrant.
2. Cook the Mushrooms
Add the chopped mushrooms and stir-fry.
If using meat, add a small amount of ground chicken, pork, or beef and cook until lightly browned.
3. Add the Lotus Root
Add the chopped lotus root or water chestnuts.
Pour in a splash of stock or other liquid and stir-fry for about 1 minute.
4. Add the Vegetables
Add the bitter melon. If preferred, use celery, zucchini, or a combination instead.
Season with salt and, if desired, a small amount of soy sauce.
Add more stock to keep the mixture moist and cook for another minute or two.
5. Add the Millet Rice
Add the cooked millet rice and mix well.
Pour in a little more stock so the mixture stays moist.
Cover with a lid and cook over very low heat for about 1 minute. Do not let the pan dry out or burn.
Finish
Remove the lid.
Add any toppings you like, such as nuts, olives, or
fresh herbs.
Drizzle with sesame oil, extra virgin olive oil, or a combination of both.
Stir gently to combine.
Serve
Transfer to a bowl and serve warm.
Notes
This dish should be moist rather than dry.
Use plenty of mushrooms for flavor and texture.
A small amount of meat adds flavor, but the dish works well as a vegetarian meal.
The recipe is flexible and can be adapted to the vegetables you have on hand.
