Method
1. Prepare Tofu
Cut one block of tofu into six pieces. Sprinkle with salt and pepper and set aside.
2. Optional Coating
Lightly dust tofu with starch, dip into beaten egg, then set aside.
3. Sear Tofu
Heat oil in a pan. Place tofu in the pan and sear until both sides develop a golden color. Remove and set aside.
4. Cook Mushrooms and Meat
Add more oil to the pan if needed. Add ginger and shallot first and sauté until fragrant.
Add chopped mushrooms and a little salt, letting the mushrooms sweat and release their juices.
Then add finely chopped or ground meat and sauté together until the meat changes color.
5. Add Aromatic Vegetables
Add celery or fennel and let them sweat briefly with the mushrooms and meat.
6. Simmer Sauce
Pour hot water into the pan and let the mixture simmer for about 10 minutes.
7. Return the Tofu
Put the tofu back into the pan. Simmer about 3 minutes on each side so the tofu absorbs the sauce.
